AS YOUNG AS EIGHT, I WAS pulling wild ramps out of the ground. They are found in large patches throughout the Appalachian Mountains and have a garlicky onion flavor. In this recipe, I use Benton’s bacon for its extra-smoky flavor, and it goes perfectly with the ramps. Sauté some Yukon Golds in the bacon fat, a touch of butter, poach or fry a couple of eggs, serve ’em over a biscuit or a thick hunk of bread, and you have one good-lookin’ country breakfast!
